His exceptional run in Wuhan continues a promising trajectory for the teenager who joined the professional circuit aged just 16.
Moody's masterclass featured impressive breaks of 108, 87 and 54, with Hawkins unable to score in the final four frames.
The match began evenly at 39-39 in the opening frame before the teenager seized complete control.
"It's the best win of my career," Moody declared afterwards. "I played very, very well, I was in the zone."
The young Yorkshireman expressed bewilderment at his own performance. "I don't know what happened, to be honest, I just potted everything, so hopefully it's the same next game," he said.
His path to the quarter-finals included an impressive victory over Chinese legend Ding Junhui in the second round.

Moody entered this week's tournament ranked 61st globally but has been climbing steadily since becoming a professional two years ago.
Recent victories against Liam Highfield and Ryan Day at the Saudi Arabia Snooker Masters have propelled him well within the world's top 32 on the one-year ranking list.
The youngster added: "I thought I'd have a run like this last season, but it just didn't happen, I wasn't experienced enough. But this season I'm more relaxed, I'm enjoying playing, competing, I love the pressure now. I'm happy."
Currently Britain's youngest professional player, Moody ranks fifth youngest across all nationalities on tour.

Defending champion Xiao Guodong awaits Moody in Thursday's quarter-final after the Chinese player defeated Matthew Selt 5-2. When questioned about whether the pressure had eased, Moody remained cautious.
"Now, sat here now, I'd say yeah," he admitted. "But when you're out there you're desperate to win, no matter what match it is. If I play like that I'll be hard to stop."

Veteran Mark Williams also progressed to the last eight, defeating Mark Selby 5-3.
The 50-year-old Welshman faces Zhang Anda, with the victor meeting either Moody or Xiao in the semi-finals.
Williams reflected on his achievement: "It's incredible what I'm still doing, really, so I'm just trying to enjoy it more."
