"I was very flabbergasted," she said.
"But I thought 'I'm going to take my moment with him so let's have a little dance with him', and that was incredible.
"I like to dance and I like his music but I totally didn't expect him, so it was such a surprise and I think everyone went out of their mind."
Wiegman has won two trophies with England, with Sunday's triumph over Spain coming three years after her side secured glory at Euro 2022.
On seeing the fans, she continued: "It was incredible, unbelievable.
"To see all these people coming to celebrate with us and supporting us throughout the tournament is just really incredible and surreal."
Ever the professional, however, Wiegman is determined not to rest on her laurels.
The Lionesses coach has admitted there remains work to do with the qualifiers for the 2027 World Cup rapidly approaching.

Meanwhile, England players have opened up on Tuesday's celebrations. Beth Mead said: "It's pretty crazy. I had to put my glasses on a few times, I could feel myself getting emotional.
"Seeing how much joy we've brought to the nation, the number of people who have come out and supported us throughout the tournament and today, the atmosphere, the adrenaline, was insane.

"I remember watching the Jubilee so seeing the crowds here for us today is surreal. It's a pinch-me moment."
Defender Maya Le Tissier seconded those comments by saying: "Going on the bus and then standing on stage with all of the staff, all of the players, all of the families at the front, is incredible.
"I had a moment looking out, thinking, 'This is crazy'. It was so special to be out there and to have all of the fans here, because obviously some of them couldn't get to Switzerland. This is their chance.
"The whole tournament was crazy. It was hard watching from the bench with all the late goals but we made it and we are here now. It was all worth it in the end.
